Twin Palms Tortilla Soup
½ cup salad oil
2 onions sliced
2 table spoon chopped garlic
½ lb Roma tomatoes chopped
1 28oz can chopped tomatoes
2 Serrano chilies grilled & chopped
1 quart La Victoria salsa
3 cup chicken stock
¾ cup water
1 tsp ground cumin
½ tsp fresh minced oregano
½ lb shredded cheese blend
½ bunch cilantro chopped
1 dozen corn tortillas grilled & cut in strips
½ can green chilies diced
½ lb cooked chicken diced
Sauté onions, garlic and the oil until softened (about 13 minutes). Add both kinds chilies and tomatoes. Cook until tender, about 4 minutes. Add stock and spices. Simmer 20 minutes. Add meat. Place a few tortilla strips and cheese in bowl. Add soup. Top with few more tortilla strips, cheese and cilantro.
